You can stop a user from picking a date in the past.
For example, a developer can stop a past Expected Start Date on a Task. The script shows a message such as "You can not select past date in Expected Start Date" and does not save. A Task does not do this by itself.
A developer adds the script in Desk's Client Script. Search Desk for Client Script, make a new one, and choose Task as its DocType. See Client Scripts for how a Client Script is made and saved.
The script runs just before the Task is saved. It compares the Expected Start Date with today's date. When the Expected Start Date is earlier, it shows the message and stops the save. This keeps the dates users enter valid.
